Lamb Spare Ribs

Lamb ribs are kind of a favorite “combo cut” of spare ribs, flank, and brisket. These are whole, uncut lamb breast sections that we tend to rub creatively and smoke/grill at about 180-200 deg until the ribs pull out easily. Good fat with strong flavor. Do them over a pan of cabbage, potatoes and carrots and keep adding a little Guinness to you and the pan over about three hours.
